These mushrooms have grey caps and white stems and come in all shapes and sizes. Some have very thick stems and small caps. Others are the opposite. We have eaten these raw, in salads, have sautéed them in pieces, and have grilled the thick bases as an alternative to hamburger patties. All delicious!
